Ingredients

  1. 3/4 cup roasted salted cashews, finely chopped
  2. 3/4 cup unsweetened flaked coconut
  3. 2 teaspoons olive oil
  4. 1/2 teaspoon curry powder
  5. 1/4 teaspoon kosher salt
  6. 2 teaspoons finely grated lime zest
  7. 3 tablespoons chopped fresh cilantro
  8. Olive oil, for the pan
  9. 2 pounds skinless cod fillet, cut into 4 evenly-sized pieces
  10. Kosher salt and freshly ground black pepper
  11. 1 teaspoon ground coriander
  12. 1/2 teaspoon curry powder
  13. Lime wedges, for serving

Instructions

  1. For the topping: Preheat the oven to 350 degrees F and line a baking pan with parchment paper.
  2. Toss the cashews and coconut with the oil, curry powder and salt in the baking pan. Bake, stirring once or twice, until the coconut is golden brown, about 5 minutes (be careful, it can burn quickly towards the end). Stir in the lime zest and cool completely. Transfer to a bowl and stir in the cilantro.
  3. For the fish: Increase the oven temperature to 425 degrees F and line a baking pan with parchment paper.
  4. Drizzle the parchment with olive oil and place the fish on top. Sprinkle all over with salt and pepper, turning the fillets to coat them with the oil. Sprinkle the top of the fish with the coriander and curry powder, then roast until the cod is just cooked through and flakes apart easily, 12 to 15 minutes.
  5. Serve the fish with the cashew coconut topping and lime wedges on the side.

Made it for the first time for my friend and I. It was easy and came out soooo delicious! Served it with riced cauliflower, seasoned with the same ingredients as the fish. Definitely yummy!!!!

A new twist on Cod …really delicious! I had a good bit of extra topping which I saved and added to vanilla ice cream the next day. Yummy!

This is a delicious recipe. The cashew topping was outstanding – it added a great crunch. Seasonings on the fish and in the topping were spot on. The fish was cooked perfectly. Great recipe!

It was the most delicious dish! Plus it was easy to make. Served it w Valerie’s recipe for vinegary collard greens and a mixed grain pilaf.

Absolutely delicious recipe and so easy to make. As an inexperienced cook, I so appreciate this recipe. It is one of my go-to’s.

The fishmonger didn’t have cod so I had to go with haddock, but it was fantastic!

Lovely flavor and easy to make.

Delish! Looking for a fresh fish recipe and this filled the bill. Felt like summer (with an ice storm outside).
Flavors are wonderful. Made just 1 lb of fish and will use extra topping on some grilled chicken tacos. Will be making again.

This was wonderful! I used whitefish filets which worked out perfectly.

Excellent. Made exactly as written and my whole family loved it. Flavors compliment each other fabulously.
