Teriyaki Shrimp and Pineapple Parcels

Ingredients

  1. 2 cups quick-cooking rice
  2. One 8-ounce can pineapple tidbits, drained
  3. 1 cup frozen peas
  4. 3/4 cup teriyaki sauce
  5. 2 red bell peppers, cut into strips
  6. 2 cloves garlic, grated
  7. 1 1/2-inch piece ginger, grated
  8. Kosher salt and freshly ground black pepper
  9. 1 1/2 pounds large shrimp (16/20 count) peeled, deveined, rinsed and patted dry
  10. Toasted sesame oil, to drizzle
  11. 3 green onions, finely chopped
  12. 1/4 cup fresh cilantro, chopped
  13. 1 lime

Instructions

  1. Cook the rice to according to the package instructions; allow to cool.
  2. Preheat the oven to 450 degrees F. Cut six 12-by-20-inch pieces of foil.
  3. In a medium mixing bowl, combine the cooked rice, pineapple, peas, teriyaki sauce, peppers, garlic, ginger and a pinch of salt and pepper.
  4. To assemble the parcels: Layer an even portion of the rice mixture in the middle of each of the foil sheets and top each with one-sixth of the shrimp. Drizzle 1/8 teaspoon sesame oil into each parcel, then seal them.
  5. Put the parcels on a baking sheet and cook until the shrimp are pink and cooked through, about 15 minutes. Open the parcels and sprinkle over some green onions and cilantro, then top with a squeeze of lime juice.

Really yummy, took some time as I chopped up cut fresh pineapple we already had rather than using canned and I rough cut a whole red onion.  Per comments below, I also 1) added extra teriyaki sauce to rice mixture to ensure flavor, 2) greased foil before adding rice mixture  – no sticking, and 3) poured some sesame oil and teriyaki sauce over shrimp in a bowl before dropping shrimp on rice mixture to also ensure some flavor. I had more rice and shrimp than fit in my 6 packets so just baked them in a glass dish with foil atop for seconds or leftovers.
I had originally seen the “packet” title and wanted to use this recipe for an RV trip, but it was a little too involved with too many ingredients in general much less those we’d have on the RV for that.  Yummy at home though.
