White Chocolate Pudding

Ingredients

  1. 24 chocolate sandwich cookies
  2. 4 tablespoons salted butter, melted
  3. 1 1/2 cups sugar
  4. 1/4 cup cornstarch
  5. 1/4 teaspoon salt
  6. 3 cups whole milk
  7. 4 large egg yolks
  8. 2 vanilla beans, seeds scraped out (caviar)
  9. 8 ounces white chocolate, chopped finely
  10. 2 tablespoons salted butter
  11. Grated semisweet chocolate, to decorate

Instructions

  1. For the crumb base: Throw the cookies and melted butter into a food processor and pulverize. Spoon some into the bottom of the serving glasses and set aside.
  2. For the pudding: Combine the sugar, cornstarch and salt in a medium saucepan. Stir or whisk together. Pour in the milk and egg yolks and whisk together. Add the vanilla. Stir over medium heat until the mixture just barely comes to a boil and becomes thick, 6 to 8 minutes (maybe less, maybe more; just watch it!). The second it starts to bubble and thicken (note: it should be thick like pudding!), remove it from the heat. Add the white chocolate and butter and stir until everything is beautifully combined.
  3. Pour the pudding into the glasses on top of the crumb base. Serve warm or chill in the fridge for 2 hours. Decorate with grated semisweet chocolate.

Absolutely delicious!! I reduced the amount of sugar to around 3/4 of a cup like other reviews suggested and it turned out perfect!!!!!

So sweet yet so good!!! It was a easy recipe to follow and I reduced the sugar to 1 cup like the other reviews suggested. I think I could still cut the sugar back to 3/4 cup.

I used the advice from other reviewers and halved the sugar. The pudding was delightful but still too sweet. Next time I will use 1/2 cup of white sugar.

Very good flavor and texture, and easy to make, but I should have read the other reviews first and cut the sugar in half as this is a very sweet pudding.
