Ingredients

  1. 2 cups whole-grain pancake mix, such as Bob’s Red Mill
  2. 1 1/2 cups milk
  3. 2 tablespoons brown sugar
  4. 2 tablespoons vegetable oil
  5. 2 large eggs
  6. 1/2 cup granola
  7. 1 tablespoon flax seeds
  8. 1 tablespoon chia seeds
  9. 1 tablespoon sunflower seeds
  10. Butter, for frying
  11. Fresh berries, Greek yogurt and fresh mint leaves, for serving

Instructions

  1. Make the batter by combining the pancake mix, milk, brown sugar, oil and eggs in a large bowl. Stir in the granola, flax seeds, chia seeds and sunflower seeds.
  2. Heat a nonstick skillet or griddle over medium heat and add a little butter. Drop in about 1/4 cup of the batter per pancake and fry on both sides until dark golden, about 2 1/2 minutes per side. Continue with the remaining batter, adding more butter if needed.
  3. Serve with fresh berries, Greek yogurt and mint.
