Grilled Pork Tenderloin

This is such a quick and simple summer dish. As you know, I love a low and slow pork butt, but this recipe really does the trick when you need a great meal on the table quickly that is bright and loaded with flavor. If you don’t have a grill, sear it in a hot skillet and finish it in the oven.

Ingredients

  1. 1/2 cup packed light brown sugar
  2. 1/4 cup soy sauce
  3. 2 tablespoons Dijon mustard
  4. 1 tablespoon hot sauce
  5. 1 teaspoon toasted ground coriander
  6. Kosher salt and freshly ground black pepper
  7. 2 pounds pork tenderloin (2 pieces), trimmed and silver skin removed

Instructions

  1. In a mixing bowl, whisk together the brown sugar, soy sauce, mustard, hot sauce, coriander, a small pinch of salt and some pepper. Place pork in a gallon ziptop bag and pour in the marinade. Allow to marinate, refrigerated, for at least 2 hours and up to overnight.
  2. Allow the chill to come off the pork for 30 minutes prior to cooking.
  3. Set up a grill for indirect heat by building the coals on one side only.
  4. Remove the pork from the marinade, letting excess drip off. Place the pork on the direct-heat side of the grill and char on all sides, about 4 minutes per side. Move the pork to the indirect-heat side of the grill and cover the grill with the lid. Cook the pork until it reaches an internal temperature of 145 degrees F, about 15 minutes. Let rest for 10 minutes before slicing and serving.

I would give this 10 stars if I could. I cooked mine in the oven after searing on my grill pan. Tender and delicious. I saved the marinade and cooked it down and mixed it with rice and oh my, it was delicious. Using the rest of the pork and marinade this evening on a banh mi!!

This was so good! Cooked on grill pan then oven- would definitely be even better on grill! Made with his mango slaw from same episode -which was awesome too. Sliced the leftover pork really thin and put on a Kaiser roll with some bbq& hot sauce and topped with the leftover slaw. Just as good as first meal. Definitely a keeper-especially for summer!!
