Ingredients

  1. Vegetable oil, for frying
  2. 1 1/2 to 2 pounds fresh cod
  3. Salt and pepper
  4. 1 /2 cup all-purpose unbleached flour
  5. 2 large eggs
  6. 2 tablespoons cold water, a splash
  7. 2 cups plain bread crumbs
  8. 1/2 teaspoon dried mustard powder
  9. 1/4 teaspoon cayenne pepper, a few pinches
  10. Wedged lemons and malt vinegar for topping

Instructions

  1. Pour 2-inches of vegetable oil into a large skillet. Place skillet over large burner and heat oil over medium high heat. To check if the oil is hot enough, drop in 1-inch cube of white bread. The bread should brown in a 40 count.
  2. Cut cod into 4 servings, 6 to 8-ounce portions and season with salt and pepper. Place a couple of scoops of flour in a pie tin. Combine egg and water in second tin. Season plain bread crumbs and mustard and cayenne in the third tin. Coat fish in flour, then egg, and then bread crumbs. Gently set coated fish into hot oil and fry 5 minutes on each side until medium golden brown in color.
  3. When the fish is evenly golden all over, remove and drain on brown paper sacks.
  4. Suggested: 3 disposable pie tins .

SO good! I used Costco cod and seasoned panko bread crumbs. My family RAVED about this! My only side note (and probably just for me) is that medium high on my gas range was too high and the fish cooked SUPER fast for the first batch. The second batch I turned to medium and even medium low.

BEST FRIED FISH EVER!!!
I would suggest using Panko bread crumbs, however. It makes the fish even more crunchy. Since Panko is more “airy” (is that even a word? Lol), after I put it in my pie plate, I use my hands to crunch some of it together so it’s a finer consistency. Leave half of the Panko regular size and mix them together. I think it sticks to the fish better this way. And lastly, I bread all the fish first and place it on a rack placed on a sheet pan. I also think this helps the breading stick better. All just my opinions. It’s an amazing recipe. Happy fish frying!

I read elsewhere to keep the oil at 375 degrees  to fry fish, so stuck my combo candy/ deep fry thermometer in the peanut oil in my wok to try to stay around that temp. Used finely ground up saltines because had no bread crumbs. Drained the fish on cooling racks, It was crispy outside, flakey inside. Perfect! My first ever fish fry and I will return to it again and again!
