Chocolate Yule Log

Ingredients

  1. 1 pre-made chocolate jelly roll cake
  2. 1 (16-ounce) container frozen whipped topping, thawed
  3. 1 teaspoon vanilla extract
  4. Cocoa powder, for dusting
  5. 10 miniature marshmallows
  6. 10 chocolate kiss candies, unwrapped
  7. 1/4 cup confectioners’ sugar

Instructions

  1. Lay cake on a clean work surface. Mix the whipped topping and vanilla extract together until combined. Spread white frosting over the top of the cake to coat completely. Roll up the cake, jelly-roll style, and then cover the outside of the cake with the frosting. Drag a fork along the length of the cake to form a bark design. Dust with cocoa powder and refrigerate.
  2. For the forest mushrooms, insert 1 toothpick through each marshmallow and then into the flat side of the chocolate kiss to form “mushroom.” Group chocolate mushrooms along cake by inserting toothpicks into surface of cake, at intervals to resemble growths of forest mushrooms. Dust chocolate kiss candies with confectioners’ sugar. Slice and serve.

Although I did not use her recipe for her frosting, but my own… But it turned out perfect. And it was a huge hit… As I ready the other reviews I think the store bought frosting makes it too sweet and the cake if you start with frozen it is so much easier to frost… But my simple recipe for a frosting is 8 oz or low fat cool whip (thawed) and 1 block of low fat cream cheese (room temp)… Whip this like crazy with your mixture. Add 1 teaspoon vanilla and powder sugar 1 tablespoon at a time to your liking… I used 3 and it is perfect.

I laugh myself silly how crazy some people get about the reviews on here….”it ruined my party”, “my guests hated it”, “went right in the trash”…my goodness lighten up and enjoy life and maybe be careful not to invite such horrible people over to your house. This was fun, silly and just plain cute!!

I was really surprised at how well this went over at my Christmas Eve dinner. It looked fabulous, as I suspected, but the big surprise was how much everyone liked the taste. My nephew actually went back for a 3rd helping!

I suspect that alot of the differences of opinion on this recipe depends on the brand of cake roll that you use. I tried 3 different stores before I found one. I can’t recall the brand, but it was actually called a “Christmas Log.”

We had a great time making this last year, so I brought out the recipe again. I made my own cake, because I’ve never seen a jellyroll cake at the store. I added lots of nuts and chocolate chips before rolling the cake. Gave it a little extra crunch!
