Freezer Fry-Up with Sunny Side-Up Eggs

Ingredients

  1. 2 tablespoons salted butter
  2. 1 small yellow onion, diced
  3. 1 red bell pepper, stemmed, seeded, and diced
  4. 1 teaspoon ground cumin
  5. 1 teaspoon chili powder
  6. Kosher salt and freshly ground black pepper

  8. 1 medium sweet potato, peeled and cut into 1/2-inch cubes (about 8 ounces)
  9. 1 cup frozen corn
  10. 1 cup diced frozen pineapple, roughly chopped while frozen
  11. 3 cups cooked shredded pork, chicken or beef
  12. 1 tablespoon olive oil
  13. 4 large eggs
  14. 2 tablespoons chopped fresh chives, for garnish, optional

Instructions

  1. Melt the butter in a large skillet over medium-high heat. Add the onions, peppers, cumin and chili powder and stir to combine. Season with salt and pepper and cook, stirring frequently, until softened and beginning to brown, 5 to 7 minutes. Add the sweet potatoes, season, and cook, stirring occasionally, until the edges begin to caramelize, about 10 minutes.
  2. Add the corn, pineapple and shredded pork, and stir well to combine. Cook until the corn and pineapple are completely thawed and warm and the mixture is hot throughout.
  3. Meanwhile, heat the oil in a large nonstick skillet over medium heat. Crack the eggs into it, cover the pan, and cook until the whites are set but the yolks are still runny, about 3 minutes (or cook to desired doneness.) Season with salt and pepper.
  4. To serve, divide the potato hash among 4 plates; top each with a fried egg and sprinkle some chives over the top, if using.

Love it! An easy recipe to make your own with any meat you have on hand! I am a “healthy” eater so sweet potatoes are the only kind of potato I buy. Easy recipe to swap for ground turkey, etc. . I also go without an egg or use egg beater only. I’m not a fan of chives so I also don’t add those in. I have never followed a recipe step for step though, everyone is to make your own and what you like!

This was the strangest recipe I have ever made. I happened to have all ingredients on hand that I wanted to use up. When he made it on the show, everyone seemed to think it was great. I thought it sounded weird, but figured if they liked it, who knows, let’s give it a shot. Well, I did, and it was nasty. I wouldn’t recommend this recipe to anyone. There were no plus’s about it. My husband tried to be brave, but lost his bravado about half way in. I do have to say, the dogs seemed to like it although I didn’t give them too much as I wasn’t sure if they should eat pineapple. I would be interested to see what someone else thinks of it. Please post if you make it, although I wouldn’t recommend it.
