Ingredients

  1. 3 cups all-purpose flour
  2. 1 tablespoon baking powder
  3. 1/2 teaspoon baking soda
  4. 1/2 teaspoon kosher salt
  5. 1 1/2 tablespoons ground cinnamon
  6. 1 1/4 cups milk
  7. 2 extra-large eggs, lightly beaten
  8. 1/2 pound (2 sticks) unsalted butter, melted
  9. 2 cups diced fresh strawberries
  10. 1 1/2 cups sugar

Instructions

  1. Preheat the oven to 375 degrees. Line muffin tins with paper liners.
  2. Sift the flour, baking powder, baking soda, salt, and cinnamon together in a large bowl. Stir with your hand to be sure the ingredients are combined. In a 2-cup glass measure, combine the milk, eggs, and melted butter. Make a well in the middle of the dry mixture, pour the wet mixture into the well, and stir until just combined. There will be some lumps but don’t overmix the batter! Add the strawberries and sugar and stir gently to combine.
  3. Using a 2 1/4-inch ice cream scoop, spoon the batter into the muffin cups to fill the liners. Bake for 20 to 25 minutes, until a cake tester comes out clean and the tops are nicely browned.

Five Stars if I wanted Cinnamon Muffins, 4 Stars because I was looking for a good Strawberry Muffin. No changes to the recipe used the 1 1/2 Tbs Cinnamon it called for. The cinnamon was the dominant flavor and the strawberries an afterthought. It was a good muffin, just not a good Strawberry Muffin I was looking for. I would definitely make again, although reduce the cinnamon and use much less than 1 1/2 Tbs.

These are pretty fancy muffins! I loved them! I added a drizzle of melted butter at the end and topped with real sugar. So good. The cinnamon is definitely what makes them so special!

These are delicious! We made ours with a mix of strawberries, blueberries, and blackberries! I only used one cup of sugar, which I tossed with the berries before adding at the end. I used oat milk instead of regular, and I also added mini chocolate chips!!

The recipe looks good but I can’t wrap my mind around adding the sugar, 1 1/2 cups of it, at the end? It’s very odd. Can this be right?
