Ingredients
- 1 pint cherry tomatoes, quartered
- 1 (15 ounce) can black-eyed peas, drained
- 1 (15 ounce) can black beans, drained
- 1 (8 ounce) bottle zesty Italian dressing
- 1 green bell pepper, chopped
- ½ onion, chopped
- 1 bunch green onions, chopped
- 2 jalapeno peppers, chopped
- 1 tablespoon minced garlic
- ½ teaspoon ground coriander
- 1 bunch chopped fresh cilantro, or to taste
Instructions
- Mix together tomatoes, black-eyed peas, black beans, Italian dressing, bell pepper, onion, green onions, jalapeño peppers, garlic, and coriander in a large bowl. Cover and chill salad in the refrigerator for about 2 hours.
- Toss salad with desired amount of cilantro to serve.

I made my own dressing. Champagne vinegar, ex virgin olive oil, dash of s & p, pinch of Truvia. Whisk good. Much better than store bought Italian. Also, used all black eyed peas.
It was ok. Wouldn’t make it again.
Didn’t have green onions so used red instead. Otherwise I made it per the recipe and it is delicious! Oh I also grilled 2 ears of corn and cut kernels off, added to the mix. Perfect!

Delicious with scoop-shaped chips. This has been the perfect quick lunch to have during quarantine! 15 minutes of prep to make a week’s worth of delicious, instantly ready food. High in protein and fiber, dairy and gluten free, and vegetarian, what more could you ask?
Made this with a couple of changes… added a can of corn for crunch, 2 avocados to cream it up a bit, Feta cheese and greek dressing because I like that flavor. Awesome!!!
This is good as a dip with chips but I will also be using this as a side dish. I didn’t use cherry tomatoes I used fresh Roma tomatoes because that’s what I had on hand and reduced the amount of dressing. I will make this during the hot summer months coming up. It not only tastes good but looks very fresh and appetizing.
I also added a red and orange pepper and only 1 jalapeño. Also the fresh juice from a half of lime. I would add diced tomatoes next after reading reviews to make it easier to scoop. Very easy and yummy!
This was a big hit! I did exactly as instructed. I made it the night before which allowed the flavors to marry and the outcome was fantastic. My sister in law is from Texas and she asked for the recipe. I will definitely repeat.
I added two cans of corn. I also used a food processor to chop the pepper, jalapeno, and onion for quick work. I didn’t add any spices and only had the dressing. It’s quite good and the jalapeno adds a nice kick!
So good! I used 1/3 bottle of Kens Zesty Italian dressing (a whole bottle would be way too much), omitted green pepper and used scallions for the onions. Everyone loved it!
A nice start but needed a little more. I added cumin, lime juice, corn, salt and pepper.

I was unprepared for the absolute delicious addictiveness of this!! My extended family has already decided it’s another one of my “things” that I have to bring. (I added a can of roasted corn). Bomb.
Only change was I added a can of roasted corn and it was wonderful. A big hit and will be making again.
My husband said he couldn’t stop eating it because it was so good. Don’the forget the cilantro—it’s the finishing touch.

Used mixed beans and a can of itailian diced tomatoes (drained) and half the cilantro. Friends really enjoyed it and it was better the next day
