Ingredients
- 3/4 cup extra-virgin olive oil
- 1/4 cup apple cider vinegar
- 2 tablespoons agave nectar
- 2 teaspoons Dijon mustard
- 1 small shallot, minced
- Kosher salt and freshly ground black pepper
- Favorite greens, for serving
Instructions
- Combine the olive oil, vinegar, agave, mustard and shallots in a bowl and whisk until combined. Add salt and pepper to taste. Toss your favorite greens with this vinaigrette and enjoy!

This was fantastic! Perfect for a leaf lettuce mix from I got from a local farm. Topped it with Alton Brown’s sauteed scallops.
All salad dressings I serve are made from scratch. I’ve been using this recipe for a couple of years now, it’s quick, light and absolutely delicious. The only changes I have made pis to use raw honey instead of the agave. Depending on the entrée I am serving, I’ve also used half pure maple syrup and half honey. Guests always comment and ask for the recipe.
Delicious! I’m sure it would be great on a more complex salad but my favorite is to have it just over baby artisan lettuce. It tastes and looks fancy but it’s so simple. Compliments any protein.
