Ingredients
- 1 tablespoon minced ginger
- Juice of 1 orange
- Juice of 1 lime
- 1 large mango, peeled and diced
- 1 small pineapple, peeled and diced
- 2 large Asian pears, peeled and diced
- 1 pint raspberries
Instructions
- In a large bowl, mix ginger with juices. Toss lightly with fruit and chill for 2 hours.

Lovely! Fresh and tasty.
My teenage son and I just made this salad and served it with Chicken Fajitas and it was amazing together. We subsituted the pear for a peach and used minced ginger from a jar. I bet grilled chicken added would make it a great salad and meal in one..
A huge hit everytime! The ginger gives the fruit a wonderful flavor!! No one can guess it but when told….”Ah yes!” Once I got over my fear of buying ginger I was fine. “Just break off a hunk!” said my produce guy. A piece for 1 T. is only about 12 cents. Takes some time to cut all up but I think it’s worth it. Really great tasting!
Great mixture of fruit that I never would have thought to put together. The raspberries were a nice touch. Everyone loved it! Next time I make it though, I’m going to leave out the ginger. It was a little too overpowering.
