Veggie-Loaded Tangy Tuna Salad

Ingredients

  1. 1 (12-ounce) can or pouch albacore tuna packed in water, drained and flaked
  2. 1 cup finely chopped red and yellow bell peppers
  3. 1/2 cup finely chopped carrots
  4. 1/2 cup finely chopped celery
  5. 2/3 cup fat-free mayonnaise
  6. 1 tablespoon plus 1 teaspoon honey mustard
  7. 2 teaspoons sweet relish
  8. 1/8 teaspoon salt
  9. 1/8 teaspoon black pepper
  10. Cut bell peppers (for scooping)
  11. Lettuce leaf “cups”

Instructions

  1. Place flaked tuna in a medium bowl. Add veggies and mix well. Add mayo, honey mustard, relish, salt, and black pepper. Mix thoroughly. Season with more salt and black pepper, to taste, if you like. Mmmmmm!

Be aware that Albacore Tuna does not have the Omega-3 that Chunk Light does. This is a terrific recipe (but, less Mayo would be better. I also use Miracle Whip Lite in mine. Tuna, celery, onions, and Pimento Olives (all chopped fine, our family’s base recipe give plenty of taste – radishes and honey mustard added something special. I left out the pickle relish (too sweet and the peppers (skins too tough.

Let me be the first to admit that I am not a fish eater, I tolerate tuna but only if it is disguised well. That said both my husband and I liked this recipe. I used standard light tuna in water, drained because that is what I have in the house. The crunch from the veggies was wonderful. I used fat free miracle whip(don’t like regular mayo. Next time I will cut the miracle whip back to 1/2 cup for I thought it was just a little too much. Also, my husband felt this would benefit from the addition of some cayenne pepper so might try that next time too.

This is a great alternative to regular tuna salad. The crunch of the vegetables makes this extra healthy and delicious! I found with the 12oz tuna, it got runny, so the second time I used a large can of white albacore tuna in water, drained and halved the amount of mayo.
This is definitely a staple in my house! Thanks Hungry Girl!
