Citrus Fennel Salad

Ingredients

  1. 1 bulb fennel, trimmed
  2. 3/4 teaspoon kosher salt
  3. 1 teaspoon grated orange zest (1 small orange)
  4. 2 tablespoons orange juice (1/2 orange)
  5. 2 tablespoons apple cider vinegar
  6. 3 cups baby arugula
  7. 1/2 cup pitted Kalamata olives, roughly chopped
  8. 1 apple, such as Pink Lady, diced
  9. 2 tablespoons extra-virgin olive oil

Instructions

  1. For the pickled fennel: Quarter the fennel bulb and cut out the core. Slice thinly across the fiber into quarter circles. In a medium bowl, toss together the fennel, salt, orange zest, orange juice and cider vinegar. Cover with plastic wrap and let sit at room temperature for about 15 minutes. At this point, the fennel is ready to use or it can be stored in the refrigerator for up to a week.
  2. For the salad: In a large bowl, toss together the arugula, olives, apples, pickled fennel with its juices, and olive oil. Toss gently with your hands or a wooden spoon.

Excellent salad. Bright fresh citrus flavor with spicy arugula for contrast. Literally couldn’t stop eating, addictive actually. Used clementines since I didn’t have oranges and diced some up along with apple. Also added a little very thinly sliced red onion. Great salad and easy to make.

Great salad.  I have made it several times, exactly following the recipe, and even people who don’t like salads enjoyed this one.  The pickled fennel lends a nice acidity to the salad and the sweet apple is a perfect counterpoint to the slightly bitter arugula.  Great combination of flavors and textures.
