Ingredients

  1. Butter, for greasing the loaf pan
  2. 1 1/2 cups all-purpose flour, plus extra for dusting the loaf pan
  3. 1 teaspoon baking soda
  4. 1 teaspoon fine salt
  5. 1/2 teaspoon baking powder
  6. 1/2 teaspoon ground cinnamon
  7. 1/2 teaspoon ground nutmeg
  8. 1 cup sugar
  9. 1/2 cup vegetable oil
  10. 2 large eggs, beaten
  11. 2 teaspoons vanilla extract
  12. 2 ripe bananas, peeled and coarsely mashed to yield about 3/4 cup of mashed banana
  13. 1 cup (about 4 ounces) fresh blueberries

Instructions

  1. Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9- by 5- by 3-inch loaf pan. Set aside.
  2. In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas and blueberries. Add the dry ingredients and stir just until blended.
  3. Pour the batter into the prepared loaf pan. Bake until a cake tester inserted in the center of the loaf comes out clean, about 1 hour. Cool for 15 minutes. Remove the loaf from the pan and cool completely on a wire rack, about 2 hours.

I didn’t like this recipe, the spice was overpowering and it was too sweet. If you want to let the blueberries and bananas shine and be the predominant flavors, find another recipe. Salt seemed excessive too.

Solid, easy recipe. Was looking for something quick after picking berries. I use Bakers Joy instead of butter and flour. Blueberries stayed throughout the loaf, (not sunk to bottom). Will make again

No tweaks needed. This recipe is amazing as is!!! Moist and holds together .. serve warm with a touch of butter and it is akin to the best blueberry muffin you’ve ever had … with a touch of something extra (the nutmeg/cinnamon). Anyway- yes.. this is quick and easy and a crowd pleaser. Highly recommend!
