Ingredients
- 3 sprigs rosemary, leaves stripped
- 6 sprigs thyme, leaves stripped
- 3 scallions
- 3 tablespoons extra-virgin olive oil
- 2 1-pound center-cut tuna steaks (about 1 inch thick)
- Kosher salt and freshly ground pepper
Instructions
- Coarsely chop the rosemary, thyme and scallions. Transfer to a small bowl and mix with 1 tablespoon olive oil.
- Season the tuna all over with salt and pepper and put in a shallow dish. Coat with the herb mixture on both sides; cover and refrigerate 1 to 4 hours.
- Heat the remaining 2 tablespoons olive oil in a large skillet over high heat. Add the tuna and sear until golden, 2 to 3 minutes per side for medium rare.
- Transfer to a cutting board and let rest 5 minutes before slicing.

Very easy and tasty even if you don’t quite make it according to the directions. Just used salt, pepper, thyme and Rosemary with olive oil and marinated it for 2 hours. Then realized that the scallions should have been included, so I chopped them up and added them for the last hour. Searing the tuna for 3 minutes per side overcooked it a bit, so I would use the lower side of time in the pan next time. Will make again!

The Food Kitchen staff hit this one out of the ballpark. Simple ingredients, tons of flavor. It is as good on salmon as tuna. Wife still talking days later about how so few ingredients could produce so much flavor.
Great recipe. I sear the tuna on fast iron for 1 minute 20 seconds each side.
I never would have thought these fresh herbs for tuna, but they were wonderful. Since I only had one piece of yellow fin tuna, I adjusted the spices. To the marinade of fresh rosemary, thyme and olive oil, I added one clove minced garlic (a must). I marinated for about two hours at room temperature. When I seared the tuna, I added two coarsely chopped green onion…another level of flavor. I would never use dried spices to this recipe. I served on a bed of fresh kale (optional).
This recipe is so delicious. Easy preparation and nice presentation. Will definitely make this again.
Delicious, easy and foolproof. I never thought traditional herbs with tuna but it works, the green onion especially adds a nice tangy note that goes well with tuna.
