Ingredients
- Nonstick cooking spray, for spraying the muffin tin
- 3/4 cup frozen pitted cherries, thawed, halved and well drained
- 3 very ripe bananas
- 1/2 teaspoon vanilla extract
- 4 large eggs
- Confectioners’ sugar, for dusting, optional
Instructions
- Preheat the oven to 375 degrees F. Spray a 12-cup muffin tin with cooking spray.
- Line a plate with 2 layers of paper towels and place the cherries on top to dry briefly.
- Put the bananas in a large bowl and mash them very thoroughly with a fork. Add the vanilla and mix and mash to combine. Add the eggs and whisk until well beaten.

- Run a thin knife around the edge of each muffin and remove with a small offset spatula. Cool slightly. Dust with powdered sugar if using and serve.

Hi. I made these this morning. I added an extra egg yoke and a slash of milk. I used blueberries with a bit of lemon zest. I added a sprinkle of nut meg and 1/4 tablespoons of cinnamon. After mashing the bananas I mixed everything in my stand mixer on medium for just over a minute.
I think they came out great. I am on a weight loss journey and was looking for something different to make. These worked. I served it with a dollop of 0% vanilla Greek yogurt.

Delicious! And zero points on weight watchers without the powdered sugar.
This was not only a very quick and easy recipe, but it was delicious as well! It is a wonderful brunch dish for anyone looking for a quick and easy recipe!

Not really a fan. I love Valerie and the idea is great for making bites in advance, but the texture is just off for me. I’ve made them a few times now and am not won over by the texture. Pass.
Very tasty and no added sugar.
can these be frozen when cooked
I love this. It is amazing!! I like how it is not super sweet and does not have gluten. Which I can’t have. I made it today for the first time and I ate half of the whole batch. I want to try it with other fruits like raspberries or cranberries for some more variety. So so good!
Great warm
Not so yummy cold
