Sunny’s Brisket Burger

Ingredients

  1. 1 pound ground brisket
  2. 1 teaspoon kosher salt
  3. Coarsely ground black pepper
  4. 4 tablespoons salted butter, melted
  5. 1 medium red onion, sliced paper thin
  6. 4 slices American cheese
  7. 4 slices pepper Jack cheese
  8. 2 tablespoons salted butter, melted
  9. 4 hamburger buns
  10. 8 to 12 pickle slices
  11. 2 cups finely shredded lettuce
  12. Yellow mustard, for topping

Instructions

  1. For the patties: In a large bowl, gently mix the brisket, salt and a few grinds of black pepper. Make into 4 equal-sized patties.
  2. For the layers: In a cast-iron pan on medium heat, add the butter and then the red onions in 4 piles. Immediately place a patty on each mound of onions and gently press to settle. Cook until the onions char a bit, about 5 minutes. Carefully flip each burger, keeping the onions with them so that they now rest on top. Cover and cook until desired doneness. Transfer the patties to a plate and immediately top with the American cheese first, then the pepper Jack. Cover with aluminum to allow the cheeses to melt.
  3. For the buns: Wipe out the pan and keep it on medium heat. Butter the outsides of the buns, then place them buttered-side down on the pan and cook until toasted, about 2 minutes.
  4. Place a patty on each bottom bun and top with pickles, lettuce, a squirt of mustard and the top bun.

Really liked this recipe & will make again.  I did grill the inside of the buns & will always do it this way from now on.  I bought my ground brisket at Aldi’s & wish I would have stocked up because I haven’t seen it since.  The taste is so good compared to ground beef.

This was a great recipe. The only reason I didn’t give it 5 stars was because I couldn’t get the burgers to have a nice char as they cooked over the onions. I would probably also toast the buns on the inside instead of the outside as suggested.

Yummy!  Followed recipe exactly and ate every bite. You can buy brisket burgers from Omaha Steaks.  They stock frozen in store.
