Pita-sa-la-dip

This recipe for an onion, anchovy and olive dip served with toasted pita wedges is a knockoff of a French classic, Pissaladiere, a Nicoise-style caramelized onion tart.

Ingredients

  1. 2 large, sweet onions, coarsely chopped
  2. 2 to 3 tablespoons extra-virgin olive oil
  3. 1 teaspoon ground thyme or poultry seasoning
  4. Salt and pepper
  5. 1 tin flat fillets anchovies, drained and chopped
  6. 1/2 cup chopped pitted black olives — your favorite variety
  7. 10 ounces garlic and herb cheese (recommended: Boursin), 2 (5-ounce) containers
  8. Chopped fresh chopped chives, for garnish
  9. 2 bags store bought pita chips, available on snack aisle, any brand or flavor

Instructions

  1. Preheat oven to 500 degrees F.
  2. Toss onions with extra-virgin olive oil, thyme, salt and pepper. Combine with anchovies and roast 20 minutes, turning once. Transfer onions to a processor.
  3. Process the onions with olives and cheese until smooth. Adjust seasonings and transfer mixture to a bowl and garnish with lots of chopped chives. Surround dip with pita chips.

This was horrible. Terrible color & very unappealing. Went straight down the garbage disposal. Photo shows onions on top of cheese; recipe says to food process it together (which I did as I didn’t see it made on TV). Maybe instructions are wrong.

This was an unusual mix of ingredients, and perhaps as a pizza or tart it would be good, but all ground up it was a strange tasting and looking mess. I made this the first time I saw this program, and my guests were polite, but most of it was thrown away.

This recipe is very easy and it’s very good. The roasting of the onions and anchovies made my house smell good. I’m always looking for different appetizers and this one will be one of my favorites. I couldn’t find pita chips in my supermarket so I used small toasts.
