Creamy Succotash

Ingredients

  1. 1 1/2 cups frozen yellow corn kernels
  2. 1 1/2 cups frozen cut okra
  3. 1 cup milk
  4. 3 tablespoons white sauce mix (recommended: Knorr)
  5. 1 (15-ounce) can butter beans, drained
  6. 1 (4-ounce) jar chopped pimento, drained

Instructions

  1. In a microwave-safe bowl, combine corn, okra and 1 tablespoon water. Cover with damp paper towels and microwave on high setting for 7 to 8 minutes.
  2. In a medium saucepan, over medium heat, whisk together milk and white sauce mix. Bring to boil, whisking constantly. Reduce heat to simmer and continue stirring for 1 minute. Remove from heat. Add cooked corn and okra, butter beans and chopped pimento to white sauce. Return to medium heat and heat through. Serve hot.

I just made this recipe and now I know what the problem is: it’s the slimy okra. This recipe has a good flavor but the okra makes an awful consistency. Substitute okra with peas or green beans and it’ll be fine. I don’t think okra was meant to be a food.

I tried making this recipe, and was BLECH!!! I’m not sure if I did something wrong with it or what, but the consistencey was horrible, sort of gave me the feeling of chewing on Vaseline with chunks in it!!! And the sauce had absolutely no taste at all to me. I very rarely throw out food (I’m not a very experienced cook, and if I mess something up my hubby can usually fix it) but this dish hit the trash can!!!

We’re huge fans of Sandra and her recipes at this house, but not this one. There was not much flavor and it just had an overall blah taste. I tried spicing it up a tiny bit too, and that did not help. We did not use okra – we used lima beans – not sure if that makes a difference.

I have never liked succotash, but, my husband like okra and the recipe looked and sounded good. So, I tried and substituted baby limas for the butter beans and is was very excellent! Thanks for the great recipe, my husband loved it too and we will make it again.
