Ingredients

  1. 1 cup diced leftover grilled shrimp (I used 8 to 10 medium shrimp)
  2. 1/4 cup fresh cilantro, chopped
  3. 1/2 teaspoon ground cumin
  4. 4 Roma tomatoes, diced
  5. 2 jalapenos, seeded and minced
  6. 2 limes, zested and juiced
  7. 2 limes, zested and juiced
  8. 1/4 red onion, cut into small dice
  9. Kosher salt and freshly ground black pepper
  10. Tortilla chips, for serving

Instructions

  1. Mix the shrimp, cilantro, cumin, tomatoes, jalapenos, lime zest and juice and red onions in a bowl. Season with salt and pepper. Serve with fresh tortilla chips.

Yummy! I decided to only use 1 jalapeño because my family isn’t too fond of spicy foods. They loved it!
