Yield: 4 to 6 servings

Ingredients

  1. 2 cups all-purpose flour
  2. 2 teaspoons smoked paprika
  3. 4 teaspoons kosher salt
  4. 2 cups buttermilk
  5. 4 eggs
  6. 3 cups panko breadcrumbs
  7. 4 tablespoons olive oil
  8. 2 large yellow sweet onions, such as Maui, sliced 1/4-to-1/2-inch thick

Instructions

  1. Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
  2. In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
  3. In a separate bowl, combine the panko, olive oil and remaining 2 teaspoons salt.
  4. Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the panko mixture.
  5. Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger rings if necessary, just make sure there is space between them. Then place in the oven. Cook until golden brown, 14 to 20 minutes. Halfway through the cooking time, flip over each onion ring to ensure even crisping and browning.

the commercial is on a loop……………fix it!

Works great. They were super crispy and I made sure to flavor the flour and panko, so they tasted great too. Nice alternative to deep fried. Wasn’t heavy at all. Thanks Jeff

Great onion rings.  I’ve never baked them before and I was a little “iffy” on the idea.  I baked them on a rack on a tray and they turned out great!.  Second time I added a little season salt too in the panko and that was good too.

Best onion rings recipe ever. My family loved them. I had enough left over to put in the freezer. I will keep this recipe and they will always be in my freezer.

Better than expected! The onion rings were super crispy. The only modification is we baked on a wire rack.

Not great flavor.

Probably should set at a lower temp. It started smoking before I flipped them.
