Ingredients
- 8 ounces cream cheese, at room temperature
- 10 1/2 ounces montrachet or other mild goat cheese, at room temperature
- 1 1/2 teaspoons minced garlic (2 cloves)
- 1/2 teaspoon minced fresh thyme leaves
- 3 tablespoons minced fresh parsley
- 5 to 6 tablespoons milk, half-and-half or heavy cream
- 3/4 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 loaves 7-grain bread, thinly sliced
- 1 hothouse cucumber, not peeled
Instructions
- For the spread, place the cream cheese, goat cheese, garlic, thyme, parsley, 5 tablespoons milk, salt and pepper in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium speed until well mixed. Add an additional tablespoon of milk if the spread is very thick. To make the sandwiches, spread each slice of bread with the goat cheese spread. Slice the cucumber into thin rounds and arrange on half of the bread slices. Top with the remaining bread. Press slightly, trim off the crusts and cut the sandwiches into halves, thirds or triangles. Make these sandwiches in the morning, then cover with damp paper towels and plastic wrap and refrigerate. Cut just before serving.

I absolutely loved these! Fresh herbs are key, as well as good bread. I’ve made it with a crusty bakery sourdough as well as pumpernickel rye. I added thinly sliced roma tomatoes, red onion, and good quality deli roast beef, for a more filling sandwich. So very delicious! I moaned when I ate it!
Very good – I love the crunch of the cucumber paired with the creamy cheese spread. You must like the tang of goat cheese to fully enjoy. I’ve made these twice and cut the garlic in half the second time, as it was strong. The next time I will cut it back a bit further. Highly recommend this recipe as well as Ina’s Turkey Tea Sandwiches.
I don’t like mayonnaise so this was perfect to include tea sandwiches for my Easter brunch. Loved by all!
These were a big hit on Christmas as an appetizer. Everyone loved them. Make the cucumbers really thin
This is a great recipe. I used lemon goat cheese and it was a nice addition. I think you could achieve the same result by using regular goat cheese and adding lemon zest. Be careful on the garlic…mine was strong and almost overpowered the cucumber. Next time I will start with less and taste test. I cut the recipe in half, made four sandwiches and cut them into quarters for 16 total squares. Thinly slicing the cucumber is key.
