The delicious cottage cheese dish is low in fat and high in protein.

Ingredients

  1. 2 cups low-fat cottage cheese
  2. 1 (10 ounce) package frozen chopped spinach, thawed and drained
  3. ½ cup grated Parmesan cheese
  4. 2 large eggs, beaten
  5. 1 pinch garlic powder, or to taste (Optional)
  6. salt and ground black pepper to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Mix cottage cheese, spinach, Parmesan, and eggs together in a bowl until well combined. Pour mixture into an 8-inch square baking dish and smooth into an even layer.
  3. Bake in the preheated oven until cheese is bubbling along the edges, 20 to 30 minutes. Season with garlic powder, salt, and pepper.
  4. You can use either low-fat or fat-free cottage cheese.

Easy to prepare. I drizzle a bit of extra virgin olive oil on top. Used 3 coups of cottage cheese instead of 2 and 3 eggs instead of 2, so it is a bit thin on the spinach side. Very pleasant and soft flavor, comfortable.

This is fantastic! My very very picky 4 year old girl ate this and loved it! I squeezed as much water as I could out of the spinach and baked it for close to 45 minutes. We changed the seasoning to a roasted garlic blend and added spaghetti sauce over the top and some meatballs on the side and we all loved it. My kids and husband said it tasted like lasagna without the noodles! It’s a 100% win in our house!

Very quick, easy and nutritious recipe. I did not add salt the second time since it was salty enough with the parmesan. Will start adding onions and other veggies next time.

I really enjoyed this recipe, but I will say that I read the reviews and decided to take some liberties, so I guess my review is more of a modified recipe. My changes: I added sauteed onion, garlic, jalapenos, yellow bell pepper, and roasted mushrooms to bulk it up without adding a ton of calories. I cut the parmesan down to 1/4 cup but then topped with cracked pepper and feta cheese for some saltiness.

I read it was bland, so I sauteed some onion, garlic, and chicken with creole seasoning for 5 minutes and then threw it in the baking dish with the other ingredients. I did use fresh spinach as well. Then topped it with cheddar cheese and breadcrumbs. With those modifications it was delicious and not bland at all.

I’ve made this several times: bland (just salt and pepper, no garlic), with onions & garlic, with Herbs de Provence seasoning, with cilantro and chipotle seasoning. It’s always delicious, especially with fresh spinach or any other green (chard, beet tops, etc.). I use 4% high fat cottage cheese. Once I used Philadelphia Cream Cheese, another time I grated up several odd pieces of different kind of cheese. I consider the given recipe to be a bland base that you can butter up, spice up, switch up, or doctor up.

This was very easy and delicious…I did add about a half cup of shredded mozzarella to the mix and sprinkled a little more on the top before baking.

This was delicious and so easy to make. Though I’ve added a bit too much salt, but it came out delicious from the oven. I’ve made for last night’s dinner and topped it with Aldi’s Italian bread crumbs for the toasted bread crumbs. Delicious! I would make it again for sure.

Great recipe! Even my cottage cheese hating family liked it. I used the Lactaid cottage cheese which is 4%. I also left out the added salt as it is still very salty. I will try cutting down the parmesan next time. I used the Costco Organic grated parmesan cheese which is very flavorful. A high protein dish. I calculated at 192 calories a serving.
