Ingredients
- 2 cups finely shredded Cheddar
Instructions
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Wrap a yardstick or ruler with aluminum foil and suspend it between two 28-ounce cans.
- Sprinkle 1/2 cup of the shredded Cheddar on the baking sheet to form a circle 6 inches in diameter. Repeat with another 1/2 cup of cheese, making 2 circles. Bake the first batch until the cheese melts and turns light brown, 6 to 8 minutes.
- Using a spatula, transfer the cheese circles to the suspended yardstick and drape them over to form taco shells. Let them hang until firm, then carefully remove. Repeat with the remaining cheese.
- Fill the shells with your favorite taco fillings.

Make sure you use parchment paper not wax paper or tin foil otherwise this recipe gets a bit sticky….. I’m addressing the previous comments about using wax paper lol….
Great idea…hit the parchment paper with a little Pam between batches…I tried both the foil wrapped ruler and a foil wrapped paper towel core…like the latter better, for the taco shell held more at the bottom.
This was so easy and fast to make! I loved them. I am on keto diet so this is perfect. Will make again over and over!!
They’re great! I had to change the parchment paper each time. The second batch didn’t come off well
Making these now my first one was a bust because I was impatient but I broke it up sort of like nachos and it was good. These are perfect for Keto way of eating. Super easy too!!
How long do these keep? Do they have to be kept refrigerated? Interested to hear people’s actual experience.
Love these
So I seem to be the only one having the issue of the cheese sticking To the wax paper…round 2 (crossing my fingers)
Jeff, this is brilliant!!! My husband has lost 112 pounds on low carb foods-We LOVE these!!!
Trying this right now! Can you use different cheese blends?
