Ingredients
- 2 whole wheat English muffins, sliced
- 1/4 cup marinara sauce
- 1/4 cup diced bell pepper
- 1/4 cup sliced black olives
- 4 -5 fresh basil leaves, roughly chopped
- 1/2 cup shredded part skim mozzarella cheese
- 2 whole wheat English muffins, sliced
- 1/4 cup barbecue sauce
- 1 medium scallion, finely chopped
- 3 oz grilled chicken breast, diced
- 1/2 cup shredded part skim mozzarella cheese
Instructions
- For the vegetable version: Preheat oven to 375F. Place English muffins on a baking sheet lines with aluminum foil. Top with marinara sauce, bell pepper, olives and basil. Sprinkle with cheese and bake for 12-15 minutes until cheese is melted.

A nice snack. I would definitely recommend toasting the bread first. If you’re not worried about calories then a smear a dab of butter on it. That will help the sauce and the veggies. I made this with red and green peppers, onions, pepperoni and olives. I also added some Italian seasoning. I think adding the seasoning really helps with the flavor. Again, I definitely recommend toasting the bread. It’s an extra step, but it helps to keep the bread firm.
For a simpler version, you can use tomato sauce, mozarella, pepperoni, and a few dashes of oregano and pop the mini pizza into the microwave for 1 minute so the cheese can melt.
If you want it crispier, you can toast the english muffin first before putting it in the microwave.
These were brilliant! I made them for my fiance for lunch and gave him 2 to eat and he loved them. I added some diced ham and mini pepperonis to them too. They were soooo good.
This is a great! I’m going to make sure I have these ingredients (and a few others) in my house all the time. The only problem…..I ate too many!!!
It is so great to have a new lunch idea for myself and the kids! This was delicious and such a great base to work with. Versatility is key with our family. Cheeze pizza for one, veggies for another, and for myself I used a few tamed jalapeno’s and black olives for a little more robust flavor. This will become a guilt free mainstain on our menu rotation. I mixed it up and put on some spinach and shopped mushroom to add some flavor and healthy vitamin A and iron!
