The Mojito might just be the quintessential hot-weather cocktail. White rum, lime juice, and lots of fresh mint make for a refreshing combination that mixologist Ivy Mix calls “a universal sign for summer.”

Ingredients

  1. 1/2 cup mint, leaves only, loosely packed
  2. 3/4 ounce simple syrup, heat equal parts sugar and water until sugar dissolves; cool before using
  3. 3/4 ounce fresh lime juice
  4. 2 ounces white rum, preferably Plantation 3 Stars brand
  5. Crushed ice, divided
  6. Club soda, to top
  7. Mint sprigs, for garnish

Instructions

  1. In a tall cocktail glass, add mint leaves and simple syrup. Using a muddler, gently bruise the mint to release the oils. While muddling, keep the mint at the bottom of the glass and avoid breaking up the leaves.
  2. To the muddled mint, add lime juice and rum. Add crushed ice to fill glass to three-quarters. Use a swizzle stick or bar spoon to “swizzle” the drink: pull up the mint-infused liquid from the bottom through the ice to the top, making sure to keep the leaves intact at the bottom of the glass. Alternatively, place the swizzle stick in the drink, and twirl it by rubbing the handle between your palms while moving the spoon up and down. Swizzle for about 15 seconds.
  3. Add a splash of club soda, then more crushed ice to fill the glass. Smack mint sprigs with your hand to release the natural oils, then garnish the drink with the sprigs and a straw. Serve.

This was a great tutorial! I couldn’t find the brand of rum preferred but went with a quality white rum and it’s fantastic! Refreshing and not too sweet-the perfect summer drink.
