Instructions
- Whisk 2 cups flour, 1/4 cup sugar, 3/4 teaspoon baking soda and 1/2 teaspoon kosher salt in a bowl. Work in 2 tablespoons cold diced butter with your fingers. Stir in 1 beaten egg, 3/4 cup buttermilk, 1/4 cup chopped walnuts and 1/2 teaspoon grated lemon zest. Pat into a buttered 8-inch ovenproof skillet using floured hands and score an X in the top. Bake at 375 degrees F until cooked through, 30 to 35 minutes.

Quick and easy recipe. Though I feel traditional soda bread (as I know it) is made with raisins. I felt it was missing the extra sweetness and moisture that raisins can bring. I’ll bring them into the recipe on my next try.
I made this recipe for St. Patrick’s day and I will definitely make it again. One thing the recipie doesn’t include is raisins, which I think are an essential in soda bread.
Very good. Ii made it in a pie plate because none of my skillets can go in the oven and it worked fine. I liked the lemon zest. Gave it a nice bright pop of flavor. Great with potato soup.
