Ingredients

  1. 1/2 teaspoon paprika
  2. 1/4 teaspoon cayenne pepper
  3. 1/4 cup plus 1 tablespoon extra-virgin olive oil
  4. 4 tablespoons maple syrup
  5. Kosher salt
  6. 1 cup rolled oats
  7. 1/2 cup raw cashews
  8. 1/2 cup raw pepitas
  9. 1/2 cup raw walnuts
  10. 1 tablespoon fresh rosemary, chopped
  11. One 7-ounce wheel Brie
  12. 1 Honeycrisp apple, thinly sliced
  13. 1/4 cup dried apricots, chopped
  14. 1/4 cup dried cranberries
  15. Crackers and crostini, for serving

Instructions

  1. Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Arrange the racks of the oven so that you can use two.
  2. Whisk together the paprika, cayenne, 1/4 cup oil, 2 tablespoons syrup and a pinch of salt in a medium bowl. In another medium bowl, combine the oats, cashews, pepitas, walnuts and rosemary. Add the oil mixture to the oat mixture and stir to combine. Spread evenly in one layer on one of the lined baking sheets. Bake, stirring halfway through, until golden brown and crispy, 25 to 30 minutes. Meanwhile, add the Brie to the other lined baking sheet and bake for 15 minutes.
  3. Heat the remaining tablespoon oil in a small nonstick skillet over medium-high heat. Add the apples to the skillet and cook, stirring occasionally, until the apples start to soften and brown, about 3 minutes. Add the remaining 2 tablespoons maple syrup and 2 tablespoons water, then stir, reduce the heat to low and cover until ready to use. Season with salt.
  4. Remove the granola from the oven and stir in the dried fruit. Reserve 1 cup of the granola. Let the rest cool completely, then transfer to an airtight container (save this for another use).
  5. Transfer the Brie to a serving platter and top with the warm apples. Sprinkle on the cup of savory granola. Serve warm with crackers and crostini.

Very good. A bit on the spicy side but the sweetness of the apples balance that out. A winner.

I’ve been wanting to make this since I saw you do it.  I finally did & it’s delish!  I’m allergic to rosemary so I used turmeric.  It’s a perfect healthy snack/appetizer for my restricted diet.  Thanks for sharing!

Absolutely love the idea of savory granola and made this without the Brie and apples to snack on. It is fabulous and a keeper recipe! Thank you, Katie!!!

This Brie is delicious. I love the sweetness of the dried fruit and the savoriness of the paprika and rosemary.

I’m a brie fanatic, and this sounds wonderful. I’ve never done more than just heat brie, so I can hardly wait to try this! Thanks again, Katie!
