Bubby’s Turkey Meatloaf with Red Pepper Sauce

Ingredients

  1. 2 pounds ground turkey (preferably dark meat only)
  2. 2 eggs
  3. 3 ounces tomato paste (1/2 of 1 small can, reserving rest for the sauce)
  4. 1 teaspoon salt
  5. 1/8 to 1/4 teaspoon cayenne pepper
  6. 1/2 cup plain bread crumbs
  7. 1 small onion, finely chopped
  8. 2 cloves garlic, pressed
  9. 3 ounces tomato paste (from reserved 1/2 can)
  10. 1 small onion, roughly chopped
  11. 1 clove garlic, peeled
  12. 1 small red pepper, seeded, cored, and roughly chopped
  13. 1 cup water
  14. 1/2 teaspoon salt
  15. 15 grinds black pepper

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl, mix together all the ingredients for the meatloaf and work together completely by hand until all ingredients are evenly distributed and the mixture is uniform. Place meat mixture into a 9 by 13-inch baking dish and shape into a loaf about 11 inches long and 4 inches wide. It is important to form it like this so that it cooks evenly throughout. The loaf should be in the middle of the pan with room on both sides for the sauce to pool.
  3. Place all ingredients in a blender or food processor and puree until smooth. Cover the meatloaf with the sauce and allow excess sauce to pool around the meatloaf. Cover pan with aluminum foil but avoid contact with meat loaf by leaving at least a couple inches of space between the top of the meatloaf and the foil. Bake for 45 minutes, then uncover and bake 45 minutes longer. Let rest for 15 minutes before cutting and serving.

My God, that is by far the best meatloaf I’ve ever had! I was a little leery at the long cook time but, every second was worth it. I couldn’t find a small red pepper at the local grocery store so, I resolved to use sriracha instead – GREATNESS! I’d definitely recommend this recipe to try!

I have always been a fan of traditional ketchup meatloaf with a simple glaze, onions, and peppers. Although I didn’t personally care for the peppers in this dish (too bitter! my wife absolutely loved it, which says a lot. I will definitely be making it again. I altered the recipe to add 1/2 cup more bread crumbs so it wasn’t as dense, and if I had any advice it would be to finely chop your garlic cloves after pressing them so they are distributed evenly throughout the loaf.

This is a very easy recipe and turns out beautifully. When I took the meatloaf out of the oven I noticed the sauce was a bit watery, but after a few minutes it set nicely. A delicious meatloaf and I didn’t alter it in any way.

Loved this meatloaf – those are 3 words I have never put together until now. I used 1 lb ground turkey and 1 lb meatloaf mix – which is a mixture of ground pork, veal, beef that they sell in a pack at a local grocery store. The meatloaf was super moist and the the red pepper sauce was refreshing. This recipe is super easy to make. I will definitely make this again.
