Ingredients
- 2 tablespoons dried parsley
- 1/2 teaspoon pepper
- 1/2 yellow onion, finely chopped
- 4 boneless, skinless chicken breast halves
- 5 chicken bouillon cubes
- 6 carrots, peeled and sliced
- 4 medium red potatoes, peeled and cubed
- 6 ounces fettuccine noodles
- 3/4 cups instant rice, uncooked
- One 12-ounce brick processed cheese, cubed (about 3 cups), such as Velveeta
Instructions
- In a large stockpot combine the parsley, pepper, onion, chicken, bouillon cubes and 10 cups water. Bring to a boil and cook for about 30 minutes. Remove and reserve the chicken from the broth, then strain the broth into a large bowl. Discard the onion mixture. Allow the chicken to cool and cut into cubes.
- Measure the broth and add water so that you have 8 cups of liquid in the large stockpot. Add the carrots and potatoes, bring to a boil and cook until the potatoes are done, about 20 minutes. Add the noodles and cook for 10 minutes more. Remove the pot from the heat and add the rice and reserved chicken. Stir the mixture and let it stand for 10 minutes before serving. Garnish with cubed cheese.

I made this one (1/20/24). Made a couple of mods: used chicken breasts, cubed and browned in the cast iron oven. Heated the onions, celery, carrots, and red bell pepper in same pot. Used homemade chicken stock ILO water and bullion. Put the chicken in the liquid for last half-hour of simmering. Added the cooked brown rice with 15 minutes to go.

Recipe is a big fail! A very boring soup with a big lack of flavor.. and at the end – ” sprinkle with process cheese cubes ( velveeta)? Who would add velveeta to a chicken noodle soup??
I used pre-made chicken/dill stock which I had in the freezer, no water/bouillon, but I believe that would have been good too. In hindsight, I would have brought the stock to a boil first, before adding the chicken. It took my stock too long to reach boiling (bad burner choice) and although I reduced time down to 15minutes, the chicken was just a bit overcooked. Added celery. Overall, it was very good and everyone had seconds and thirds. (No one chose to add cheese, inc. this writer 🙂

Sorry Trisha. This soup was not good. Also production was not good either. On some shots you had on one necklace, and on other shots you had two. Your editor needs to do better.
This soup is awful. Bouillon cubes…REALLY! This is a sodium overload not to mention unhealthy. This soup has a processed flavor. Why bother making soup if these are the ingredients you are going to use! Just as easy to use fresh ingredients and cook it a bit longer!
And then let’s REALLY ruin it and add an enormous amount of sodium and calories with proceeded cheese! Better off with canned soup and a grilled cheese sandwich. Don’t waste your ingredients on this.
This was really delicious and darned easy! It was a fairly chilly and rainy here in Virginia (1-03-15) and this recipe sounded like a win-win. It was!I
It is a good rainy day soup. Exactly what it is. Quick and easy. If you added anything else,it could turn out to be too complicated. Very good !
Poor programming on this episode. Neither the noodles nor the rice was cooked when they ate the soup. Cheese? I think not
This soup is a joke.. I mean processed cheese, instant rice and bouillon cubes… that’s disgusting… soup is so easy to make with fresh real ingredients, I love some of her other recipes but this one is nasty. Don’t waste your time on this artificial processed soup, so bad for you.
