Ingredients

  1. 5 medium plum tomatoes, halved lengthwise, seeded, and thinly sliced
  2. 1/4 red onion, peeled, halved lengthwise, and thinly sliced
  3. 1 Kirby cucumber, halved lengthwise and thinly sliced
  4. A generous drizzle of extra-virgin olive oil, about 2 tablespoons
  5. 2 splashes red wine vinegar
  6. Coarse salt and black pepper

Instructions

  1. Dress the tomatoes, onions, and cucumber with olive oil, red wine vinegar, salt, and pepper.
  2. Let stand while you prepare dinner, about 20 minutes. Re-toss and serve salad with crusty bread for mopping up juices and oil.

Super quick, easy and delicious. I like to seed the tomato. I use 1tsp. Salt and pepper and add either cilantro or Basil and goat cheese. Add the crumbled goat cheese just before serving.

I added zesty Italian dressing instead and it was all gone, no leftovers. I also cut the cukes thicker so they wouldn’t get soggy. I like my veggies crispy.
