Ingredients
- 2 tablespoons canola oil
- Kosher salt and freshly ground black pepper
- 8 ears corn, fresh or frozen and thawed
- 1 stick unsalted butter, softened
- 1/4 cup mayonnaise
- 1/2 teaspoon onion powder
- 1 lime, zested
- Lime wedges, for serving
Instructions
- Heat a grill or grill pan over medium heat.
- In a small bowl, combine the canola oil, salt and pepper, to taste.
- When the grill is hot, brush the corn with the seasoned oil. Grill on all sides until the corn is charred and tender, about 12 minutes. (Reserve 2 ears for Round 2 Recipe Corn Salsa.)
- While the corn is grilling, in a bowl combine the butter, mayonnaise, onion powder, and lime zest.
- When the corn is cooked, generously brush on the flavored butter and serve with a wedge of lime.

This recipe is great on shucked or canned corn. I just add all the ingredients to the pot of corn. I also add lime juice along with the zest.
This is one of those recipes that seriously overdelivers. The butter mayo spread with the hint of lime from zest is the perfect complement to the pan grilled corn. We cooked the corn on a grill pan, and it created the perfect tenderness with just the right char. This was the perfect complement to a couple of thick rib eyes.
Absolutely delish! I used olive oil instead of canola oil because that’s what I had available but still very tasty! Quick, easy & flavorful!
Very tasty and flavorful, I would use a little less lime next time but everyone liked it and its very easy to apply to the corn vs normal butter
Wow! Don’t think I’ve ever tasted corn this good. I made this on the BBQ grill and even ate it left over the next day. It was extremely easy and fast to make. Perfet way to make corn. Can’t wait to make it for my Labor Day BBQ.
