Summer Veggie Kebabs

Ingredients

  1. 4 baby bell peppers
  2. 2 large shallots, peeled, halved
  3. 1 chayote squash, seeded, cut into 1 1/2-inch chunks
  4. 1 yellow summer squash, cut into 1 1/2-inch chunks
  5. 4 flat metal skewers
  6. 2 tablespoons olive oil
  7. 1/2 teaspoon kosher salt
  8. 1 teaspoon freshly cracked black pepper
  9. 1 teaspoon ground cumin
  10. 1/4 teaspoon smoked paprika
  11. 2 tablespoons agave syrup
  12. 1/2 lemon, juiced

Instructions

  1. Carefully arrange the prepared vegetables onto skewers, and put them on a baking sheet. Combine the olive oil, salt, pepper, cumin, paprika, agave and lemon juice in a small bowl. Brush the marinade on the kebabs and let marinate for 15 minutes.
  2. Preheat a grill or grill pan to medium heat. Put the skewers on the grill and cook on all sides, about 6 minutes total. Arrange the skewers on a serving platter and serve.

Excellent! I dont have skewers, so grilled over open flame and did meat on griddle next to it! We added sweet potatoes and garlic sale as well as beef short ribs separate (marinated seperate for 6 hours. EXCELLENT!

Pretty tasty. I especially liked the chayote on the kebabs. I do agree with others, tho, that said it needed more oomph, so I added a bit more salt, cumin and other spices. I did not add more agave as it was sweet enough. Might add a bit of chile powder next time!

Love most of Guy’s recipes, but this one just didn’t hold much of the seasoning. Not that it was bad just could have been spiced up a lot more!

These are delicious…the glaze/marinade is perfect because it complements the veggies flavor without smothering. Will making these on a regular basis!

The marinade was delicious! Use gloves when peeling the chayote. My hands are still not the same. The squash makes your hands very dry. I would marinate the veggies and then put them on kabobs. Served them with Guy’s blackberry glazed pork tenderloin. Delicious!
