Broccoli and Cauliflower Salad

Ingredients

  1. 1/4 red onion, thinly sliced
  2. 2 slices bacon, cut in small pieces, cooked to crisp
  3. 1/2 bunch broccoli, cut into small florets (about 1 1/2 cups)
  4. 1/2 small head cauliflower, cut into small florets (about 1 1/2 cups)
  5. 2 tablespoons sugar
  6. 1 tablespoon red wine vinegar
  7. 1 teaspoon Dijon mustard
  8. 2 tablespoons vegetable oil
  9. 1/4 cup mayonnaise
  10. 1/2 teaspoon seafood seasoning, such as Old Bay
  11. Kosher salt and freshly ground black pepper

Instructions

  1. Shock the onions in an ice water bath for 10 minutes to temper the sharp flavor, and pat dry. 
  2. Place the bacon, broccoli, cauliflower and onions in a large salad bowl. In a small bowl, whisk the sugar, vinegar and Dijon mustard. Slowly drizzle in the oil, whisking to make an emulsion. Mix in the mayonnaise and seafood seasoning. Season with salt and pepper. Pour the dressing over the vegetables and toss.

I made this 3 times. The 2 tablespoons of sugar was too strong, so I tried 1 Tbsp of honey instead and loved it. Also used one shallot sliced very thin instead of the quart of a red onion. Always looking for new ways to add veggies to a meal. Great to make a batch of this and add to a protein for something quick.

A nice change having the vegetables raw as a side, and the dressing was excellent, though I also cut down to 1Tbs sugar

Delicious! I cut a bit of the sugar but added dried cranberries and raw sunflower seeds! I have made it at least 4 times, turns out great every time.

Fabulous salad.  I’ve been making this as my go-to salad for several years. I usually double or triple the recipe and occasionally add an apple and some crasins. I get very positive comments and requests for the recipe.

1st time I’ve written a review!!  But this is such a great salad!!  I did not have a red wine vinegar so used a balsamic instead.  Got rave reviews at a potluck!  I will DEFINITELY use again!!  PS  Your instructions in turning off adblock+ would not work!!  sorry.

I needed to use up a head of cauliflower, so I made this minus broccoli and bacon. I didn’t have the Old Bay so I swapped a drizzle of toasted sesame oil in place of the vegetable. It tasted almost identical to the dressing at a popular Japanese restaurant. The salad never made it to the table because by the time the rest of the meal was ready, the bowl was empty. Can’t wait to try it with bacon and broccoli.
