Killer Mango Champagne Cocktail

Ingredients

  1. 1 (12-ounce) can mango nectar
  2. 2 star anise
  3. 1 cinnamon stick
  4. 2 whole cloves
  5. 12 black peppercorns
  6. 1/2 teaspoon red pepper flakes
  7. 1 bottle Champagne or sparkling wine

Instructions

  1. Bring the nectar to a boil in a small saucepan over high heat. Reduce the heat to medium and cook for 2 minutes. Turn off the heat and add all of the spices. Let the mixture cool, then strain and refrigerate.
  2. Spoon 2 tablespoons of the spicy mango mixture into a Champagne flute and top with chilled Champagne.

I turned up the volume a bit on this delicious tipple because I thought it needed a bit more kick! I followed the ingredient quantities but simmered the spices in the nectar for about 10 minutes and then cooled the whole lot before straining. The simmering imparted a denser, more mellow flavour (as you would expect and the drink offered just the right amount of spice without being overpowering. Absolutely recommend this one (but do think about simmering the spices for a richer taste sensation.
