Ingredients
- 4 to 5 pounds chicken thighs
- 1/2 cup white vinegar
- 1/2 cup soy sauce
- 4 cloves garlic, crushed
- 1 teaspoon black peppercorns
- 3 bay leaves
- Steamed rice, for serving
Instructions
- Combine the chicken thighs, vinegar, soy sauce, garlic, peppercorns and bay leaves in a large pot. Cover and marinate the chicken in the refrigerator for 1 to 3 hours.
- Bring the chicken to a boil over high heat. Lower the heat, cover and let simmer for 30 minutes, stirring occasionally. Remove the lid and simmer until the sauce is reduced and thickened and the chicken is tender, about 20 more minutes. Serve with steamed rice.

Delicious! I used boneless skinless thighs and added a teaspoon of powdered ginger (all I had). Once the chicken started cooking I added 2 dried peppers amd a diced Vidalia onion which added some nice flavor. The family loved it!
First, I like to brown the chicken (with no liquids) then add the marinade to it. In the marinade, I put slivers of ginger. Yummy to my tummy!
Have been making this recipe for a while now and my whole family loves it from the 5 year olds to the 68 year old I couldn’t ask for an easier more delicious recipe
I plan to prepare this recipe tomorrow on my Filipino husband’s birthday! I want to be sure I understand….after marinating, I am to cook the chicken IN the same marinade? Is that correct? Please someone who knows, please respond asap. 🙂
Just like my mom’s adobo! I may try the different variations, but this recipe tastes too much like my Nanay’s adobo. It’s very comforting!
