Pancake Rolls

Ingredients

  1. Buttermilk Pancake Mix, recipe follows
  2. Vanilla yogurt
  3. Butter, for cooking
  4. Fresh blackberries
  5. Fresh blueberries
  6. Fresh raspberries
  7. Fresh strawberries
  8. Homemade Granola, recipe follows
  9. 3 1/2 cups all-purpose flour
  10. 6 large eggs
  11. 4 cups fresh buttermilk
  12. 6 teaspoons baking powder
  13. 1 1/2 cups milk
  14. 1/2 cup sparkling lemon soda (to make the pancakes really fluffy)
  15. 4 ounces Almonds
  16. 4 ounces pecans
  17. 4 ounces walnuts
  18. 1 pound old-fashioned oats
  19. 1/2 tablespoon ground cinnamon
  20. 1/4 tablespoon ground nutmeg
  21. 1 cup maple syrup
  22. 1/4 cup honey
  23. 1 stick butter, cut into pieces
  24. 1 orange, zested and juiced (use a small grater to get zest)
  25. 1/4 cup water

Instructions

  1. Wash and cut the fresh fruit (any seasonal fruit works in this dish). Melt some butter over low heat in a 10-inch frying pan or griddle. Pour an 8-inch round of Buttermilk Pancake Mix in the pan. The pancake will “swell.” If it is too thick, pat it down. Cook until golden brown on the bottom, and then flip the pancake and cook the other side until golden brown. 
  2. Place the huge pancake on a warm plate. Spread the pancake with vanilla yogurt. Next, sprinkle a handful of the fresh mixed fruit on the pancake. Roll the pancake so you create a big roll, like a burrito. Smother more vanilla yogurt and fresh fruit on the top of the pancake roll. Scatter 2 tablespoons of Homemade Granola over the pancake roll. Eating Time: GONE IN A FLASH – THIS IS DELICIOUS!
  3. 2 1/4 teaspoons salt 
  4. Mix the flour, baking powder and salt together in a large bowl. Beat the eggs, buttermilk and milk together in another bowl. Then add to the flour mixture. Mix these ingredients together until almost smooth. Finally, add the sparkling lemon soda and mix in quickly – do not over beat this stage. Put the mix in the refrigerator for 2 hours to allow the mix to “raise.” You can also make this the night before and leave overnight; it will be ready for breakfast.
  5. Preheat the oven to 225 degrees F. Chop the almonds, pecans and walnuts into small pieces. Mix the nuts with the oats, cinnamon, nutmeg, syrup, honey, 1/4 cup water, butter, orange zest and juice in a large bowl. Spread out on a large baking sheet. Toast in the oven for 2 hours. Every 30 minutes, stir the mix and make sure that it is all toasted. Beware – if the oven is too hot it will burn instead of toasting. The granola is ready when all the moisture has been absorbed. Take out of the oven, cool and store in an airtight container.

These pancakes are absolutely amazing! Husband and I tasted them st the restaurant prior to learning that they were featured in DDD. I have made pancake rolls TWICE within three days- that’s how good these came out. Used store-bought granola. Pancakes are exceptional. Light, fluffy, buttery, and a new favorite to add to my cookbook! Highly recommended!

I only made the granola. Absolutely outstanding! The only thing I had to adjust was the cooking time. After reading the other two granola reviews, I decided to cook it longer at a slightly higher temp. I doubled the recipe and followed it exactly ingredients wise. I ended up toasting the granola for 2 hr 30 min in my electric oven @ 210F. I used a large shallow cookie sheet with a lip. Stirred it every 30 minutes until it changed color to a light brown. Then cooled them in the pan. They were still a little moist when they came out of the oven, but when cooled it was nice and crunchy. Really delicious, best granola I have ever had. Family loved it! This one is a keeper. Will definitely make again and again.

Taste was good but granola was gummy and didn’t get crunchy. Will not try this recipe again.

I made the pancake only and did not have buttermilk so used plain milk instead. Still had great flavor and nice and light

I only made the granola: I followed the recipe with the exception of adding more cinnamon. It smelled wonderful while baking but had little to no flavor when completed. I used all organic ingredients (except the honey which lends itself to be even more flavorful. Will not make this recipe again.
