Ingredients
- 1 large head (about 3 pounds) green cabbage
- 4 slices extra-thick bacon, cut into 1-inch squares
- 1 cup water
- 2 tablespoons Smash Seasoning, recipe follows
- One 10-ounce bag baby carrots
- Salt and freshly ground black pepper
- 1 teaspoon cayenne
- 1 teaspoon celery seed
- 1/2 tablespoon lemon pepper
- 1 tablespoon garlic powder
Instructions
- Core cabbage and chop into 2-inch pieces. Clean thoroughly and let drain.
- In a large pot over medium heat, cook bacon halfway through. It will release its fat and be lightly browned, but still moist.
- Add the cabbage, water and Smash Seasoning. Cover and reduce to a simmer and steam 2 hours, stirring every 15 minutes. Drain water from pot and add carrots. Cover and simmer another 15 minutes, until carrots are tender. Add salt and pepper, to taste.
- Mix ingredients thoroughly and keep in a tightly sealed container for up to 6 months.

I made this today and really like it a lot. Based on some of the other reviews, I used only half the amount of Smashing Seasoning and it was perfect (I do like spicy food!). This is a great, low-cost and delicious vegetable dish that can feed a large family. Thank you also for your fun video.
Have made this dish twice. The second time through was better as I substituted the cayenne pepper with dried chipotle pepper. Much less heat and nice smokey flavor. Used the simmer burner on gas range turned as low as it will go and had no problem with excess water evaporation. Agree with an earlier review that recommended reducing the size of baby carrots. No larger than 1/2” thick and 1” in length.

We really enjoyed this, although I had to make a couple changes, because…COVID-19. I used cubed kielbasa with a little bacon fat, and had to look online for a lemon pepper substitute (used fresh lemon thyme, lemon zest, and pepper). I will definitely make it again. The only change I would make is to cut carrots smaller and adjust final cooking time accordingly.
So good! This became my new favorite. It has some spice to it and I added a little extra, but it was so good! Highly recommend.

Made 1 batch according to directions, but pepper and cayenne were overpowering. Made a 2nd batch without the cayenne and pepper and mixed together they’re delicious. Loved the video BTW
I reduced the amount of water by half and replaced the ‘smash’ with 1.5 tsp Creole seasoning (which I had in my cupboard) and eliminated the need for additional salt (lower sodium) and pepper. I truly detest mixing a ‘custom’ seasoning blend for one recipe. I did not drain the little residual liquid before I added the carrots. The dish came out well. The low, slow cooking makes the cabbage tender and flavorful. However, this recipe is definitely not for the cook ‘in a hurry’!
This recipe is absolutely terrible. Bar none the worst I’ve found to date. It is unreasonably time-consuming for a cabbage recipe, and the amount of braising liquid that is recommended is ridiculously low. Be prepared to use over 10 cups if you cook for the full 2 hours, unless you like scrubbing your pots. The seasoning mix that they recommend doesn’t complement the cabbage that well, and the carrots really should be added before the braising liquid is removed from the mix.
Wow! This was great. I used quartered brussel sprouts instead of cabbage and cut back a lot on the cayenne. I slice up carrots and added with the brussel sprouts and only cooked for about 40 minutes. Sweet and delicious.
I didn’t want to stew cabbage again so I was looking for something different. It had a great flavor and a little spice. I didn’t have the celery seed so I did without, and I substituted a bag of carrots, broccoli and cauliflower for the carrots and it was excellent! I will make this again.
