California Lettuce Cups

Ingredients

  1. 1/4 cup lime juice (from about 4 small or 2 large limes)
  2. 2 tablespoons extra-virgin olive oil
  3. 3/4 teaspoon salt
  4. 1/4 teaspoon freshly ground black pepper
  5. 4 red grapefruits
  6. 2 avocados
  7. 1/2 cup toasted almonds, roughly chopped
  8. 1 serrano chile, roughly chopped
  9. 1/2 cup fresh cilantro leaves, roughly chopped
  10. 1 head Boston or butter lettuce, leaves separated, washed and dried

Instructions

  1. In a small bowl whisk together the lime juice, olive oil, 1/2 teaspoon of the salt, and the black pepper. Set aside.
  2. Cut the grapefruits into segments: For each grapefruit, slice off the top and the bottom; set the grapefruit on one of the flat sides and cut off the peel and pith, following the curve of the flesh. Working over a medium bowl, use a paring knife to carefully cut down the sides the segments, releasing them from the membranes and into the bowl. Discard the membranes.
  3. Halve and pit the avocadoes, then scoop out the flesh using a large spoon. Dice into bite-size pieces and add the avocado to the bowl with the grapefruit segments. Add the almonds, chile, cilantro, the remaining 1/4 teaspoon salt and the dressing, and toss gently. Spoon the mixture into the lettuce leaves and serve.

Way too sour and soupy! I also did not like the almonds in this salad. Maybe walnuts would have worked better. However, nuts were the least problem with this salad! I so wanted to like this because it was from Giada; however, it was a disappointment. One star only because of the wonderful ingredients that DID NOT go well together!

Completely agree with the other reviews. I LOVE LOVE LOVE Giada but this was super sour. I added 1/2 teaspoon of sugar which combined nicely with the hotness of the serrano. I like the idea of using one orange instead of a grapefruit.

Cut his recipe in half and made it for myself for dinner this evening. I was just wonderful. The almonds make it perfect. I did add an orange to as someone else had mentioned. I can’t wait to make this for my next outside pool party!

It looked so delicious but WAY too much work dealing with the grapefruit, which ended up being mostly grapefruit juice. A miss.

These look so delicious and I couldn’t wait to make these for my boyfriend after seeing the episode! It seemed to me that using four grapefruits was a bit much…maybe a typo?

I used only one grapefruit, the juice from one lime, and because I had cucumber and red onion left over, I diced them into there also and it brought out yet another layer of freshness.

These were such a BIG hit! My boyfriend liked them so much he posted pictures of our beautiful meal on Facebook!

These are so easy and versatile and next time I make these I am going to add some shrimp sautéed in garlic and olive oil for a bit of protein.

Giada, we love you but,,, WAYYY to sour! Try orange slices and orange or lemon juice. Avocados and Almonds are a great touch tough….
