Sheet Pan Roasted Cod

Bright, light and easy is the name of the game with Mary Berg’s simple one-pan fish dinner featuring roasted cod made with broccolini, tomatoes, sourdough loaf and feta cheese.

Ingredients

  1. 1/4 cup olive oil
  2. 1/2 teaspoon crushed red pepper flakes
  3. 2 garlic cloves, minced or grated
  4. 1 lemon
  5. 2 cups cherry tomatoes
  6. 2 small bunches broccolini
  7. 2 shallots, peeled and halved lengthwise
  8. 1/4 stale sourdough loaf, torn into large bite sized pieces (about 2 cups)
  9. Kosher salt
  10. Freshly ground black pepper
  11. 100 grams (3.5 ounces) feta cheese
  12. 400 grams (14 ounces) cod loin
  13. Fresh basil, for garnish
  14. Fresh parsley, for garnish
  15. 1/2 head radicchio, roughly torn
  16. 2 teaspoons extra-virgin olive oil

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. In a large mixing bowl, whisk together the olive oil, crushed red pepper flakes, garlic and the zest of the lemon. Add the cherry tomatoes, broccolini, shallots and torn sourdough. Season with salt and pepper and mix well to coat.
  3. Scoop the vegetables and bread out onto a large, rimmed baking sheet, leaving some of the flavored oil at the bottom of the bowl. Halve the lemon and add to the pan, cut side down. Roughly crumble the feta into large hunks and dot over the vegetables and roast for 10 minutes.
  4. Meanwhile, cut the cod into two equal pieces and add them to the remaining oil in the bowl. Toss well to coat, season with salt and pepper and leave in the bowl to marinate while the vegetables roast.
  5. Add the fish to the vegetables and roast until the fish is cooked through, another 10 to 15 minutes.
  6. Transfer to plates and scatter with basil and parsley. Roughly tear the radicchio onto the plate next to the fish and squeeze over the roasted lemon. Drizzle with a little extra-virgin olive oil and season with salt and pepper.

I took the advice from the other reviews and omitted the radicchio. It was a wonderful meal! My husband and myself enjoyed the roasted lemon squeezed over the top. Served it up with some quinoa on the side. I think it’s a great go to meal. Maybe next time I’ll try a Salmon fillet !?

This was outstanding!
I omitted the radicchio and just squeezed the lemon juice over the whole dish when I took it out of the oven. It was easy and quick and I definitely will make it again.

I enjoyed this recipe, it was an easy dish to prepare. The flavors were good and fish was cooked perfectly. I added a bell pepper and artichokes and next time I’ll add diced red potatoes. We weren’t fans of the radicchio so next time I’ll omit that. Thank you.

Excellent! So easy, great flavor and you can use any fish or any vegetables you have in you fridge. I made it a 2nd time with tilapia. It was delicious !

Oh wow. So good. Used Aleppo pepper instead of red pepper flakes. I have made this numerous times. Used cod, salmon and shrimp. It is so flavorful, so easy, and so worth it.

Love this recipe! Quick and easy, perfect for a week-night meal or for guests on the weekend. I substituted a few ingredients due to dietary restrictions and preferences: used leftover garlic bread, zucchini slices instead of broccolini, added sweet bell peppers, and omitted the shallots. So amazing! Trying to incorporate more fish into our lives and this is a winner!

Oh my goodness! This dish is so good. I didn’t use the bread as we are a gluten free household. The seasoning is spot on. A little spicy, a little zesty, so delicious. I wasn’t able to get radicchio, so I just squeezed the lemons on the whole pan. This is definitely going into our meal rotation!!
