Hot Spiced Buttered Rum

Ingredients

  1. 4 tablespoons unsalted butter, softened
  2. 2 tablespoons light brown sugar
  3. 1 teaspoon pure vanilla extract
  4. 1/2 teaspoon ground cinnamon
  5. 1/2 teaspoon ground allspice
  6. 1/4 teaspoon freshly grated nutmeg
  7. 3 cups unsweetened pineapple juice
  8. 4 fluid ounces dark rum
  9. 4 long cinnamon sticks

Instructions

  1. In a small bowl mix the butter with the sugar, vanilla, cinnamon, allspice, and nutmeg until thoroughly combined.
  2. Warm the pineapple juice in a medium saucepan until very hot, but not boiling. Remove from the heat and whisk in spiced butter until combined. Divide the rum among 4 mugs. Pour the pineapple juice into the mugs. Drop a cinnamon stick into each mug to use as a swizzle stick. Serve.

This is a great holiday drink. The combination of the spices, creaminess of the butter, acidity from the pineapple juices, and warmth of the rum provide a great fullness of flavor. Can be made in a batch as the recipe suggested, or constructed by the cup by warming the pineapple juice and then adding the spiced butter and rum.
