Armenian Pizza (aka Lahmajoon)

Ingredients

  1. 2 garlic cloves
  2. 1 medium onion, roughly chopped
  3. 1 small green pepper, seeded and roughly chopped
  4. 1 pound ground lamb (or ground beef)
  5. 1 (6-ounce) can tomato paste
  6. 1 (14 1/2-ounce) can diced tomatoes
  7. 1/4 cup chopped parsley leaves
  8. 1/2 teaspoon ground cumin
  9. 1/2 teaspoon cayenne pepper
  10. Salt and pepper
  11. Flour tortillas
  12. Lemon wedges, to serve

Instructions

  1. Heat the oven to 400 degrees F.
  2. Pulse the garlic in a food processor to mince it. Add the onion and pulse to chop, then add the green pepper and pulse to chop. Add the lamb, tomato paste, tomatoes, parsley, cumin, cayenne, and salt and pepper; process until everything is very well chopped. The consistency should be wet and pasty, like hummus. Spread a thin layer of the meat mixture onto flour tortillas all the way to the edge. Bake directly on the oven rack for 8 to 10 minutes, or until the edges are browned and the meat is cooked through. If the tortilla begins to inflate in the oven, pop it with a fork from the top. To serve, squeeze some lemon over the top, fold the pizza into quarters, and eat out of hand.

Great recipe, I use same ingredients, but prefer pita bread over tortillas. 

From memories of my Armenian grandma’s I layer the ingredients sort of like you’d make a pizza.

While the end result tasted good, I’ve had better. I found that when i placed the tortilla directly on the oven rack they started to slip through and created an incredible mess. It definitely wasn’t worth the hassle.

I have been looking for a long time for such a recipe, I used to buy those in Montreal and could not find them in Indianapolis. Excellent! I combined the 2 FoodTV recipes, put a 1/2 cup of parsley instead of 1/4, added 1/2 tsp of paprika, 1/2 tsp of allspice, tbsp of dry mint and I made my own pizza dough. Love it, thank you very much!

I think this is something you would have to grow up eating and be accustomed to, because it made my husband and I absolutely gag. The texture was just weird and pasty and not at all enjoyable.
