Black Bean and Peach Salsa

Ingredients

  1. 1 cup canned black beans, drained and rinsed
  2. 1 cup diced peeled ripe peaches
  3. 2 tablespoons minced red onion
  4. 1 tablespoon minced fresh cilantro
  5. 1 jalapeno, minced, with seeds
  6. 1 clove garlic, minced
  7. Kosher salt and freshly ground black pepper
  8. Tortilla chips, for serving, optional

Instructions

  1. Combine the beans, peaches, onion, cilantro, jalapeno and garlic in a medium bowl. Season with salt and pepper to taste. Serve with tortilla chips or spooned over grilled chicken or fish.

Needed something juicy so I added some chopped pineapple, and mixed some of the pineapple juice with ground cumin and chili powder and tossed that in too.  It added a bit of southwest kick.  Great flavors!  Susan Lyons, CO
