Chicken Noodle Soup

Yield: 4 cups soup

Ingredients

  1. 4 cups chicken stock, homemade or store-bought
  2. 3/4 cup diced onion
  3. 3/4 cup diced celery
  4. 1 tablespoon minced garlic
  5. 2 ounces dried egg noodles, cooked to al dente
  6. 1/2 teaspoon finely chopped fresh tarragon leaves
  7. 2 teaspoons finely chopped fresh parsley leaves
  8. Lemon halves, for serving

Instructions

  1. Bring stock to boil for 2 minutes in a large, non-reactive stockpot with lid on, over high heat. Add onion, celery, and garlic. Lower heat and simmer for 2 minutes. Add noodles and cook 5 more minutes. Remove from heat and add herbs and salt and pepper, to taste. Serve with lemon halves and add squeeze of lemon juice if desired.

Add carrots. If I’m at the store and can pick up a rotisserie chicken, I cut it up and toss it in. So easy & delicious.

Really enjoyed this,  It had a lot of flavor even with such a short ingredient list.  I used store bought chicken broth and added a boiled breast and a thigh, shredded, and I added 3 carrots, sliced.  I couldn’t imagine chicken noodle soup without carrots.

Easy and quick! It’s not epic, but considering it’s very quick and only a few ingredients it’s quite good. There’s not much effort, which is the main reason I chose this, so I could carry the ingredients back to my dorm and cook it in the dorm kitchen with ease.

Very good. I am not a big fan of chicken noodle soup but this one is great!!! i originally made this for my mother in law when she was under the weather. My brother in law was visiting her and tasted it and pretended to be sick to get me to make him some.

The only drawback was finding fresh tarragon but our Whole Foods carries it so that is not an issue any more.
