California Roll Bowls

This dish is a deconstructed version of the California roll, which typically includes crab (real or imitation), cucumber and avocado. Ree skips the avocado and doubles down on crunch with shredded carrots and canned fried onions. She tops it all with pickled ginger, sesame seeds and seaweed snacks, which are a nod to the nori seaweed found in many rolls.

Ingredients

  1. 1/3 cup mayonnaise
  2. 1 to 2 tablespoons sriracha
  3. 2 teaspoons soy sauce, plus more for serving
  4. Drizzle sesame oil
  5. 4 teaspoons rice vinegar
  6. 8 ounces imitation crab, shredded
  7. One 8.8-ounce microwave bag sticky rice, cooked and cooled
  8. 1 mini English cucumber, sliced into rounds
  9. 1/2 cup shredded carrot
  10. One .35-ounce package seaweed snacks
  11. 1/4 cup packaged fried onions
  12. 2 heaping tablespoons pickled ginger
  13. 1 tablespoon sesame seeds
  14. 1 scallion, sliced thin

Instructions

  1. In a bowl, mix the mayonnaise, sriracha, soy, sesame oil and 2 teaspoons of the rice vinegar until well combined. Fold in the imitation crab, then set aside.
  2. Divide the rice between two serving bowls, adding 1 teaspoon rice vinegar to each. Stir to mix the vinegar into the rice.
  3. Place the dressed imitation crab into the bowls, followed by the cucumber, carrot, seaweed snacks, onions and pickled ginger. Garnish with the sesame seeds and scallions, then serve.

OMG! If I could give it more than 5 stars I would! This was SO good! These are the things I either left out or subbed
Can lump crab meat instead of imitation crab
Did not use seaweed, sesame seeds, or scallion
Used frozen onion rings cooked in the oven.

So very good. I added a little baby spinach and very little seaweed cut up in very small pieces because I don’t care for the taste but it had it just the right amount of flavor. This will be added to my rotation list. So quick and easy.

Excellent meal. I left out the seaweed and then substituted the fried onion with wonton strips and the rice for spring mix lettuce. Will definitely keep this one close and make it regularly.

This was good. I doubled the crab because I thought it was too saucy. I used regular brown rice and added  avocado because that is what I had on hand.

Creative but please don’t eat fake crab. It’s disgusting. I’ve seen the process to make imitation crabmeat . It’s extruded fish paste with a ton of sodium.
