Orzo with Feta and Tomatoes

Ingredients

  1. 1/2 pound orzo
  2. Salt
  3. 2 tablespoons butter
  4. 1 cup feta cheese crumbles
  5. A handful of parsley leaves, chopped
  6. 1/2 pint grape tomatoes, halved
  7. Freshly ground black pepper

Instructions

  1. Heat water in large sauce pot to boil and add pasta, cook to al dente.
  2. Melt butter in the pot while still hot and combine with feta. Add cooked pasta to feta butter and toss with parsley and tomatoes, season with a little pepper.

Took this recipe to a new level.  It was a substitute for dinner as it was a super hot day and not too hungry.  Added chopped red onion, fresh basil and mint, topped it off with chopped avocado and canned salmon.  Dressed it with freshly squeezed lemon juice.  Delicious!!

My family and I loved this recipe. However, the tomatoes were not a big hit. I think I will try it with another veggie like broccoli next time. I also used less feta to save on the fat and it was still very flavorfull and super yummy!!

I have been making this dish for years as a side dish to grilled lamb….instead of the grape tomatoes I use a 15 oz. can of diced tomatoes…..not so dry that way…otherwise, I absolutely love this recipe.

I’d suggest to warm up the tomatoes before adding to the orzo mix. Otherwise, good side recipe for a quick dinner.
