Ingredients
- 1 head escarole, chopped
- 1 head green or red leaf lettuce, chopped
- 1 (15-ounce) can cannellini beans, drained
- 1/2 red onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons sugar
- 1/4 cup red wine vinegar
- 1/3 cup extra-virgin olive oil
- Salt and pepper
Instructions
- Arrange the greens on a large platter or in a salad bowl. Top with beans and red onions.
- In a small bowl, combine garlic, sugar and vinegar. Whisk in oil. Pour dressing evenly over the salad. Dressing may also be made in blender or food processor. Season salad with salt and pepper, serve.

Simple & delicious
Not only was this SUPER easy and fast, the presentation was excellent and it was DELICIOUS. I used pomagrante red wine vinegar because thats all i had. Still great.
This is a simple, quick and refreshing salad.
This salad is very good on your own, but I’ve made it a number of times now depending on what else I was serving. Our favorite I think is green onions instead of the red onion, shredded carrots and chopped bacon added to the recipe. And of course a sprinkling of cheese to compliment the meal.
What an outstanding salad, that can also be a meal in itself. Everyone that we have prepared this for, loved it. It is a great pairing for grilled meats.

This was really yummy. I had it for dinner and threw in a grilled chicken breast. It would make a great lunch too. Just remember to bring the breath mints:)
This is now a regular dish in my home! Some slight variations when ingredients warrant; however, it is a wonderful and refreshing salad my family enjoys almost every night.
