Mexican Red Rice (Arroz Rojo)

Ingredients

  1. 1 tablespoon vegetable oil
  2. 1 cup long grain white rice
  3. 1/3 cup finely chopped white onion
  4. 1 clove garlic, minced
  5. 2 1/4 cups chicken broth
  6. 3 tablespoons tomato paste
  7. 1 1/4 teaspoon kosher salt
  8. 1 serrano chile
  9. 1 fresh cilantro sprig

Instructions

  1. In a large heavy saucepan, heat the vegetable oil on medium-high heat. Add the rice, onions and garlic. Saute until the rice has an opaque color and is fragrant, about 2 minutes. Add the chicken broth, tomato paste and salt. Mix well to incorporate evenly. Then add in the chile and cilantro sprig. Cover, reduce the heat to low, and simmer until rice is ready, about 30 minutes. Fluff with a fork and serve immediately.

Loved this rice. I am not a huge fan of Mexican food but my husband loves it. We made Tequila lime chicken (food tv recipe also) and needed a side with it. I found this recipe and tried it. I think I goofed because my tomato paste was double concentrate so I didn’t need the full 3 tbsp but it was still good. Will definitely make again.
