Ingredients
- 1/2 cup old-fashioned oats
- 1/2 small apple, chopped, plus more for topping, optional
- 2 no-calorie sweetener packets
- 1/4 teaspoon ground cinnamon
- Dash salt
- 1 cup unsweetened vanilla almond milk (recommended: Blue Diamond Almond Breeze)
- 1/4 teaspoon vanilla extract
- Blueberries, for topping
Instructions
- Combine the oats, apple, sweetener, cinnamon, salt, almond milk, and vanilla extract in a nonstick pot on the stove. Add 1 cup water and mix well. Bring to a boil, and then reduce to a simmer.
- Stirring often, cook until very thick and creamy, 12 to 15 minutes. Top with blueberries and additional chopped apple, if using. Eat!

I have never ever EVER liked oatmeal. It’s a texture issue for me. However, I LOVE this recipe and I can finally eat oatmeal using this recipe! I cook the oatmeal so that it is a bit firmer in texture, and the added fruits and creamy texture keep it from being soft and slimey! Thanks Lisa! I eat this every other day and am full until lunchtime!
